"Arroz Con Pollo" or Rice with Chicken

Hello friends! Today is the match against U.S.A and for that reason we want to share the recipe of one of our most traditional dishes in the Costa Rican cuisine which is "Arroz con Pollo" because you can prepare it easily and enjoy it with your family  while you are watching the soccer match.

Ingredients to prepare our " Arroz con pollo":

• 1 cup corn
• 1/2 cup peas 
• 3 cups of rice
• 1 diced onion
• 4 garlic cloves
• 2 diced carrots
• 1/2 teaspoon salt
• 2 diced red peppers
• 3 cups of chicken stock
• 2 tablespoons of annatto
• 1/2 finely chopped cilantro
• 2 boneless chicken breasts
• 3 tablespoons vegetable oil

How to prepare our traditional "Arroz con Pollo":


• Place the chicken breasts in a pot and cover with 6 cups of cold water, then bring to a boil. Add 1 red  pepper,  the half of 1 onion, 1 garlic clove, and salt and cook over medium heat for 35 minutes. 

• Take the chicken out and cut it into strips. In another pot, heat vegetable oil over medium heat.Fry the other half of onion, then add carrot, the second red pepper, and finally the  garlic.  Add 1 cup of water and cook these ingredient  for 10 minutes.

• Stir in the annatto(achiote) and add the salt and mix well. Add uncooked rice and 3 cups of chicken stock, cook for 10 minutes at  medium heat until the water evaporates. Reduce heat to low and carefully add the chicken, corn and peas. Cover the pan and cook the rice for another 5 minutes. Mix everything gently with a fork and finally add the cilantro.
